
I was so excited to use my spaghetti squash, and happy that Ben gave me the idea to use a recipe from How it all Vegan. The recipe was for Stuffed Spaghetti Squash and had mushrooms, lentils, bread crumbs, etc...as the stuffing. :P Sounded good to me!
After an hour of trying to get my knife unstuck from the squash, I stuffed the insides with that really great mixture! (Smelled so good!) Then, something went wrong. My squash baked forever in the oven and never got soft. Not even a BIT. I went well past the time listed in the recipe book, but this squash had issues. After a very long time, I tested the squash. Holy shit. I thought I was going to die. It was SO bad...no - beyond bad... it seriously tasted poisoned. (not the filling! That was good...just the squash!) I spit it out and washed my mouth out forever and tried to think if I ever wrote out that will I was intending to write. I was so convinced it was poisoned, that I tried to figure out if I had any real enemies who would switch my salt for something toxic. It was really that bad tasting.
After I realized I was going to survive this after all, I went back to the kitchen for more food. LOL! I ended up making Faux Egg Salad, for the first time ever. It sounded really gross, so I never bothered making it before. I was SO wrong! This may be a new lunch favorite for us! Britty loved it too. We had the "egg" salad in spelt pocket bread with spring greens on it and fresh basil and dill. Fresh dill is the best, isn't it? We had a fruit salad of kiwi, banana, and red pear chunks and ate them with our tiny fondue skewers. Much better than poisonous squash!!
Do you think I could have gotten a bad squash? It looked fine other than being incredibly difficult to cut. It didn't smell or look bad at first. I'm going to try it again, but will have an ax on hand to cut the squash, and Ipecac Syrup...just in case. Maybe I should not have guests when I do that. Lol!

Oh my god- that sounds like a really creepy experience. I think our bodies really react to food that is not right in some way. I've never had that happen with a squash! Thanks for writing about it, though, I'll know what to watch out for!
I just want to put in my vote for fresh dill- it's so tasty, and we don't use it enough. Yum.

This is a great post. It's good to write about the colassal failures as well as the successes. I'm so impressed that you went back to the kitchen and cooked something else. I probably would have just gone out for a burrito or something! I have had squashes that refused to cook before... I think if they are extra thick or something, maybe it takes a whole lot longer. Hm. Glad you didn't get sick!

ahh its so sad when good food goes bad huh? yes, I have had some funky squash in my time and it really sucks. Glad you had a quick back up!
Oh no!!! Damn that evil squash and how it ruined one of my favorite recipes! It's such a yummy recipe... I hope you'll try it again despite your bad experience. It's very truly yummy.
I had an experience like that once with Tempeh... the first time I tried tempeh. Sadly, I've been unable to bring myself to try it again... I almost threw up. I think it was really freezer burnt and funny... I remember it had black spots which are apparently a bad sign.... :(
I hope you haven't cross off spaghetti squashes off your list for life!!!

Wow I have bad grammar tonight!
I couldn't stop laughing. In the middle of our table is a bunch of stuff that we use all the time - Spike (for Marty), soy sauce, fake parm cheese, salt, pepper, hot sauce, sriracha, etc. Just the thought of having a guest for dinner, and them seeing ipecac in the middle of all the other food stuff had me in stitches. That might actually be a funny joke...
This is my THIRD attempt to leave a comment here! I just wanted to say that I think you got ahold of an unripe squash. I've actually had this happen before and clue #1 is not being able to cut it and wanting to toss the squash and knife into the trash right then and there. And like what happened to you, the squash never would get soft. Hopefully, you were just eating raw squash and not poison squash!

Ben - it wasn't he recipe!! I'm sure it was the sqaush! I will definitely try the recipe again, and I'd never give up on spaghetti squash! I know I love them...but only ripe ones! I agree with you on tempeh... I was told to try steaming it first to get the bitterness out. I have to try that!

What a weird coincidence. I decided to look this up on the internet (curiosity got the better of me) and here's what I found: "Gourds and edible squash should not be planted within pollinating distance (about 900 feet) of each other. Gourds are bitter-tasting (some say poisonous) and cross-pollination can transfer this to edible squash and pumpkins."

I just had the same experience, a really really tought squash and it was absolutely disgusting!!! I love spaghetti squash! I've had it many times and it is usually sweet and delicious. But today I nearly barfed! I have never eaten a bitter squash like this one. Ever. It was unbelievable.
