
A quick recipe with a few modifications from Student's Go Vegan Cookbook made a quick and great dinner.

I ran out of mushrooms, so I used white canelli beans and green peas too! At first I was going to skip the maple syrup listed in the recipe, but I'm glad I didn't. The syrup baked right into the squash and was really good, and not too sweet as I had expecting. I could have eaten the squash plain, but the stuffing was too good to miss! Britty and I each had half and it was more than enough.

Those look like nuts in the photo, but those are the white canelli beans. I would have loved mushrooms in this, but the beans made up for it, and I may keep them in next time, even if I have mushrooms on hand!

I just used an acorn squash last week, and I am wishing I had it back to make your beautiful stuffed dish. I guess I'll just have to get another one! Although I do love mushrooms, I like your choice of white cannellini beans. YUM!
Would you recommend this book- especially to a college student like me?

I don't know if it's just me but those peanut looking beans make me craze Stuffed Squash with Peanuts :)

stuffed acorn squash is one of my all-time favorite recipes to make; and I absolutely LOVE that cookbook - I've used one of the recipes in there so many times, that I don't even need to read the instructions anymore!! I can just make it from memory!! glad to see that you're enjoying that cookbook too :0)
it's BELOW freezing here - we definitely need to stay warm!!
Those squash look awesome, Candi! I've made rings with acorn squash, but never stuffed one. I would be leery of the maple too. I think the winter squashes are plenty sweet naturally. Chase hates mushrooms, so I'm glad the beans make a good substitute!
